This site has several calculators (listed below). It also has an offline pack you can download. The current one (Ver.009) is completely in Japanese, though. Ver.008 uses both Japanese and English names in its lists. You can download Ver.008 here. There are differences between the two, but the monster data we're taking from it is the same.
Once you download whichever pack, unzip it. In the main directory is a file called "index.html". Open that in your browser and you can navigate the pack from there.
Edit: They still have an online version. It's a bit old (I think it's version 007), but the eFlee data needed for the Accuracy Calculator is the same. Find it here.
Dex - Your TOTAL DEX, which includes Cannonball, rings, capes, masks, + bonus from armor, stats from Brown/Green stuff, and whatever else
Weapon - Your weapon. Note that Sword (One Hand) means a one handed sword, and Sword (Two Hand) means a two handed sword. Same goes for Axes.
Haste - Level of Haste on you
GT - Level of GT on you
You will get an ASPD number between 0 and 2. Take that number and divide it by 2 to get a percent, which is what you see in game on your character information. Note that this doesn't include Berserk, or ASPD bonuses from weapons and armor, like SOSS and Panggril set. Just add that to the calculated percent.
This calculator determines your hit rate and flee (evasion) rate.
Lv - Your level
Dex - Your TOTAL DEX, which includes Cannonball, rings, capes, masks, + bonus from armor, stats from Brown/Green stuff, and whatever else
AdjHit - This is any additional accuracy you have, including Blazing Sword, the Accuracy buff, + bonus from armor, bonuses from Brown/Green stuff, and whatever else. Leave the percent sign off.
eLv - The enemy's level
eHit - The enemy's hit rate, used to calculate your flee rate. You can find that in the offline pack, under the Monster section.
eFlee - The enemy's flee rate, used to calculate your hit rate. You can find that in the offline pack, under the Monster section.
Hit the calc button and you'll get the results. Note that hit rate will always be between 20% and 96%, and flee rate will always be between 4% and 80%.
Str - Your TOTAL STR, which includes Beef Up, rings, capes, masks, + bonus from armor, stats from Brown/Green stuff, and whatever else
Vit - Your TOTAL STA, which includes Heap Up (remember, +40 STA at max), rings, capes, masks, + bonus from armor, stats from Brown/Green stuff, and whatever else
Dex - Your TOTAL DEX, which includes Cannonball, rings, capes, masks, + bonus from armor, stats from Brown/Green stuff, and whatever else
Int - Your TOTAL INT, which includes blah blah blah.
Weapon - Your weapon. Note that Sword (One Hand) means a one handed sword, and Sword (Two Hand) means a two handed sword. Same goes for Axes.
Min - The minimum of the attack on your weapon (i.e. the 380 in 380~382) WITHOUT +'s. If your weapon already has +'s, you'll have to look up the base attack of it.
Max - The maximum of the attack on your weapon (i.e. the 382 in 380~382) WITHOUT +'s. If your weapon already has +'s, you'll have to look up the base attack of it.
Refine - The +'s of your weapon, ranging from 0 to 10
AdjAtk - This is any additional attack you have, including SF, GT, Sword/Axe Mastery, Blazing Sword, Smite Axe, Asmodeus, suit piercings, Earrings, attack rating bonuses from Brown/Green stuff (15 Merc Green set is the only one I know of), and whatever else
You'll get a MinAtk and a MaxAtk. MinAtk is the one you actually see in game on your character info.
