Missing out on 60 Str(it'd be suicidal to take those points out of Sta...) will lower your damage by a lot, by at least 600 per Burst Crack; that kind of difference adds up fast. You can obviously AoE with low damage, but it means that you'll be taking hits and rage crits for alonger amounts of time, making it that much more dangerous each AoE. Merkrack is based on high damage and fast kills, not about having enough Defense and HP to survive for long amounts of time.
You won't be killing as fast, or leveling as fast as most Merkracks with standard builds. You also have a higher chance of dying, thanks to the slower kill times. My Merkrack is Lv86, and while he can AoE comfortably enough, with 60 less Str he'd be almost unplayable.
My advice would be to start over your character, to save yourself the frustration, as well as the restat later on. Getting to Lv55 as an Assist is pretty easy, since you can still FS people if/when you get bored of AoEing.
